When food is vacuum packaged, it loses its natural aroma. Adding a fresh food
smell before sealing the package doesn’t work, because the food absorbs the
smell. Instead, Nestlé of Switzerland hopes to make meat and
confectionery more appetising by adding smells to an inert gas such as helium,
neon or argon, and pumping this into the package just before sealing it (EP 814
023). The gas does not dissolve in the food so it escapes into the air when the
package is opened, giving a sudden rush of aroma.
