FANCY some patriotic French fries in your national colours? They could be
heading your way now that a team from the US Department of Agriculture has
crossed coloured wild potatoes with domestic Irish whites. Charles Brown of the
USDA in Prosser, Washington, found the red, purple and blue-fleshed varieties in
the South American Andes.
Brown鈥檚 colleague Pete Thomas says the spuds are good for you because they
contain antioxidant pigments usually seen in berries. 鈥淚 have a son who鈥檚
patriotic and I fix him potato salad in red, white and blue,鈥 says Thomas.
